Throughout the year, our groves are tended with care: from soil management to pruning, the work begins long before harvest.
When the season arrives, the olives are picked by hand, with the experience and knowledge of those who know each tree and can recognize when the moment is right. We harvest different varieties at different times throughout the season, because it is the combination of variety and ripeness that defines the character of each extra virgin olive oil.
Straight from the tree to the mill within hours, with no delays that could compromise the fruit. The result is three olive oils, each with their own identity, harvested at its best moment.
